Apricot and Baobab Baked Oats

Apricot and Baobab Baked Oats by Steph’s Gluten Free Bakes
Ingredients
– 50g gluten-free oats
– 1 tsp baking powder
– 1/2 tsp lemon curd
– 1 tsp SACO Baobab Powder
– 125ml of your favourite plant-based milk
– 1/2 an Apricots
– A few walnuts
How to make Apricot and Baobab Baked Oats
- Preheat the oven to 180°C.
- Grease a small ramekin.
- In a bowl, mix all the dry ingredients with milk.
- Transfer half of the mixture to the prepared ramekin.
- Add the lemon curd.
- Top with remaining batter.
- Bake for 20 minutes, or until the top is golden brown.
- Cut the apricot into 2 slices.
- Decorate with walnuts, apricot slices, and more lemon curd if preferred.
- Serve warm or cold.
